With the rise of the Apple app store there has been many great and many awful apps. With there being so many I thought I might make a list of the best, to save you time, data and of course money. If this is successful I mayhave to start a series.
I highly recommend the following:
Bloons ($1.30) - Made by the famous Ninja kiwi also responsible for the flash game of the same name. As the title suggests, you pop balloons, you are a small monkey and use the touch screen to control direction and power of the small darts you throw to pop balloons. There are heaps of cool power-ups like multi-darts and boomerangs. There are also 100 levels, which I have completed all of (but not without the help of unlimited darts mode DX). You can also create your own levels using all the same items available in the normal levels.

My (not very good) custom level. Nom wouldn't fit.
Spawn ($2.60) - An interesting app where many multi-coloured lines follow your fingers around the screen creating colourful explosions which are cool. There are many other options such as, two finger mode, single finger follow mode, swirl (around your fingers) etc. You can also adjust things like particle size, speed and trail length. It's pretty fun just to play around with when you are bored. 3 finger tap for menu. You can also take screen shots in the menu or by pressing the home and power button simultaneously (this is actually the global command for SS).

Oh so sexy Spawn in action.
Google Earth (free) - Just like the PC version. You can visit pretty much anywhere. It will even store places in the cache to view offline, as long as you don;t restart the Ipod/Iphone.

Pocket Guitar ($1.30) - As the name implies Pocket guitar is a guitar sim. It features many different instruments and effects. Bass guitar sounds like crap on it though, which sucks because I play bass. Sound quality is pretty good for all the other types of guitar.
MotoChaser ($1.30) - Probably the most well known app, It's the one featured in the ads. Basicly it is a motorbike racing game in which you use the accelerometer to control the steering. It's is quite fun, but a bit short, taking about half an hour to complete.
Doodle Jump ($1.30) - A strange but simple platformer. You control a small creature which jumps up the screen between platforms. You tilt the Ipod/phone to make the character move left and right around the screen. You can also tap the screen to shoot little balls at enemies. The game just keeps going untill you fall off/ miss a platform. There are many different enemies and traps including: black-holes which suck you in, spiders that kill you, platforms that break and moving platforms. There are also some more I haven't come across yet.

Drawr (free) - A simple drawing program similar to mspaint. you can draw using the touch screen or use the sliders on the sides to control the brush. It is incredibly easy to use, even my three year old sister can do it. Just double tap for menu. You can also save images to the pictures section of the ipod.
TonePad (free) - A fun app for just mucking around in. You have a grid in which you tap squares to make them light up and play a sound. From top to bottom is high - low. Tones play from left to right.
That's it for now. I have some more I may write about sometime.
